Maurice Earthstone

Maurice operating an Earthstone Oven in a professional kitchen setting

In 1956, Maurice Sabbagh Yotngeparian emigrated to the United States from Marseille, France, with nothing but a single suitcase and an education in mechanics. He took a job as an auto mechanic, but his lack of knowledge of the English language meant that he had to start at the very bottom. Maurice did eventually learn English, and in just a few short years, he opened his shop. Simply called Maurice’s Automotive, the shop stood for quality, honesty, and integrity. With these pillars, Maurice’s attracted Hollywood’s auto elite. Business boomed.

By 1986, Maurice’s Automotive was so lucrative, that Maurice was ready to begin a well-deserved, early retirement. During what was meant to be a restful trip to visit family in France, Maurice’s cousin treated him to a traditional French meal with a glass of wine on a star-lit patio during a rainy October afternoon. The entire meal was prepared in a homemade pizza oven. The taste reminded Maurice of his youth – of slowing down, enjoying real food, and being surrounded by family. The mechanic in Maurice was curious – could he recreate this experience for his home in Los Angeles, California?

The Ovens

In 1987, with a mechanic’s mind, Maurice set out to build his wood-burning oven. He learned all that he could about the product, and then he expanded upon it. Soon, he was discussing cast clay bodies, tile materials, and heating mechanisms with the old pros.

What started as a side project transformed into a successful business, Earthstone Ovens. Thirty-seven years later, Earthstone still stands by Maurice’s quest for high-quality products and features an honest business model where integrity matters.

Today, Earthstone provides some of the top wood, gas, and electric ovens on the market all over the United States, Canada, and abroad. Earthstone’s ceramic and high-performing ovens use an induction cooking technique to create the perfect pizza in just minutes. Or, place a rack directly in the oven, and you have a barbecue. The possibilities are endless. With Earthstone’s high-density, high-quality ceramic walls, chefs of all kinds can bake bread, roast chicken, or 16 lbs of turkey for Thanksgiving far better than in the traditional oven.

Earthstone ovens were the first wood-fired ovens on the market to get approved to be placed inside the home. Earthstone creates a safe, family-friendly product with materials that customers can trust. Today, Maurice is proud to say that his ovens not only power some of the most prestigious commercial kitchens in the world, but he’s also installed ovens in the homes of dozens of Hollywood celebrities.

Versatility

Versatility means ease of installation, use, and care. Our residential ovens come pre-assembled and built in our Glendale factory then shipped to the customer, or they arrive modular constructed to be assembled on-site by a qualified builder. Create yours with or without a hand-crafted hood or granite shelf. Either way, intense heat sears in flavor and seals juices, creating a perfectly-heated product. All ovens are ETL-listed and backed by a five-year limited warranty. Earthstone also carries a complete line of accessories, ranging from pizza peels to wood storage carts.

Family

But Maurice’s love for his family is more important than the business. That’s why Earthstone is still a family-run business, thirty-seven years later. With a showroom and factory in Glendale, California, everything is on view for the customer and made in-house. Not only does this mean that each oven is crafted with the strictest standards of care and quality, but it also allows Maurice to be near his beloved family in sunny Los Angeles.

At Earthstone Ovens, our motto is simple: quality without compromise.
